The first day of Bayram begins at sunrise when men dress in their finest clothes and go to prayer.
Ramadan Bayram comes after a strict fast of 30 days, during which believers cannot eat or drink anything from sunrise to sunset.
Turkish restaurants have prepared for this celebration with appetizers made from vegetables, cheeses, yogurts and spreads. An oriental explosion of colors and flavors.
The main course features lamb or beef. Adana Kebap, lamb ribs and skewers or Turkish meatballs must be accompanied by potatoes, white rice, bulgur or cheese flatbread. Families gather around the table after the children go caroling.
However, Ramadan Bayram is a celebration of sweets, and the star of these days is syrupy baklava.
Claudia Damache, pastry chef: "They are made with a lot of patience, with great care. The sheets are rolled out by hand, stacked on top of each other, folded into triangles, and nuts are placed in the middle. The syrup is made separately. It consists of sugar, water and lemon".
Even those who do not celebrate today enjoy the Bayram treats.
The celebration lasts for 3 days, during which Muslims visit their relatives, especially the elderly, and savor the dishes prepared especially for this occasion.
